Coconut Ice Cream for Dogs And Human!

This is addictive and super delicious!

Dairy free, gluten free and loved by my dogs (and me!).

You can omit the sugar. I add it in because I share this with my dogs and it tastes better with sugar!

This is a Thermomix recipe.  Don't have a Thermomix?  Check out my super easy and yummy Banana Coconut ice cream that can be made in any blender.

 

Ingredients

I litre 100% Coconut cream
100g Coconut blossom sugar (or any coconut sugar)
2 free range eggs
Coconut meat from 2 coconuts (or buy ready-made. Read my TIPS below)

1. Add all ingredients into the bowl of the Thermomix. Cook for 7 mins / 80° / speed 4.
2. Pour into ice cube trays.  Freeze for 6 hours.
3. Blitz frozen cubes in the Thermomix bowl for 30 seconds on speed 9.
4. Scrape down sides of the bowl and then blitz again for 30 secs on speed 9.

Pour into a 1 litre container and freeze for until firm.

It will freeze quite solid.  I find taking it out of the freezer 10 minutes before serving helps with scooping it out.

 

TIP

I like the Aroy-D 100% coconut cream available from most Asian supermarkets.

Any coconut sugar will work but my favourite sugar is 'Sugars Of The World' Indonesian Coconut Blossom Sugar. It gives the ice-cream a caramel taste and is available from Woolworths.


Niulife Organic Creamed Coconut is a great alternative to fresh coconut meat. As far as I am concerned, you can't have too much of this stuff!
